Helpful Equivalents [1]:

1 pound (450 g) of fresh, in-shell chestnuts = approximately 3 cups (425 g) of peeled nut meats
3 cups (425 g) of peeled nut meats = approximately 1 cup (175 g) of chestnut flour
1-1/4 pound (560 g) of fresh, in-shell chestnuts = approximately 2 cups (475 g) of chestnut puree
1 pound (450 g) of dried, peeled chestnuts = approximately 1-3/4 pounds (800 g) after re-hydration

Allow about 1/3 pound (150 g) of fresh chestnuts per serving.
